Those URLs you see on Google Search Console are not the direct access URL to the category pages but it seems to be a filtered way to access them and in such cases, the canonical should point only to the main category page.
If you set a self-referencing canonical on those pages you could very quickly find yourself without a crawl budget to get the website crawled and indexed.
To get around this issue you could potentially prevent Google from even accessing those pages by adding the following on your robots.txt file:
Disallow: /*?*orderby=
You might need to add additional rules for the other query strings on those pages.
