The customfield variable only works for the posts, not for the archives or taxonomies as it looks for the data in the postmeta table. That’s why the details from the fields are not getting added to the Schema. You will have to create custom variables using the following filter to get the data from the fields: https://rankmath.com/kb/variables-in-seo-title-description/#how-to-add-custom-variables
You can use the following function to get the details added to the user profiles: https://developer.wordpress.org/reference/functions/get_user_meta/
