2. Their objective is to help the user, so if they provide extra information for the user, they are good to be there. Also, they might be displayed in Google Results (not always, it is up to Google). As a disadvantage, well, images take a few milliseconds to load so if your page has a lot, it can slow your website loading speed.

Sitemap, should I upload on GSC just the main sitemap? Or several sitemaps (1 to pages, 1 to posts, 1 to categories, etc?)

You just need to add the sitemap_index.xml file to the Google Search Console, the rest will found by Google using that sitemap.
