1. Could you please share the URL so we can check the breadcrumbs as well? If the permalinks of your site are already configured, Rank Math should use the modified URL as well.
2. Are you referring to removing the /product-category/ in the URL? If so, Rank Math has a remove category base option if you’re using WooCommerce on your products: https://rankmath.com/kb/general-settings/#remove-category-base

1. We want to configure the breadcrumbs to match our predefined Permalinks. Is there an automatic way that RankMath will read the Permalinks and create the breadcrumbs from that?

2. We want to build our own permalink structures and not what is already predefined in WordPress. Is that feature available to manually override and do it ourselves?

Do you also use the Permalink manager as the same plugin you have integrated with RankMath?

1. Yes, in Rank Math breadcrumbs, it will use the links you have set up using the plugin.
2. Rank Math can also modify URLs/slugs which could conflict with the Permalinks Manager plugin. Here are the features you can disable in Rank Math so you can use it alongside that plugin:
Remove category base: https://rankmath.com/kb/remove-wordpress-category-base/
WooCommerce URLs: https://rankmath.com/kb/general-settings/#woo-commerce
