Can you please try following the steps below to see if that works for you?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. If the above steps doesn’t seem to work, kindly apply the following filter code to your site.
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');
Here’s how you can add filter/hook to your WordPress site:

Once you’ve done following the above steps, please remove and re-submit your sitemap_index.xml on GSC and allow Google a while to crawl your sitemap again.

Does not help. Sorry but when google is saying it can not read the sitemap link, something is odd. Seems removing rankmath is much better way to normal…
What about post-sitemap.xml not readable. For the sitemap_index.xml google found 80 post and pages of 2200

From your screenshot, it seems that you have submitted your index and post sitemap.
Please note that you only need to submit your sitemap index to your Google Search Console account. Here’s a link for more information:

Also, your post sitemap contains 2000 posts per XML. Google crawls small-sized sitemaps faster. With this in mind, Rank math uses the links per sitemap limit to break down sitemaps into smaller parts. You can also check Google’s guidelines for sitemaps:
https://developers.google.com/search/docs/advanced/sitemaps/build-sitemap
Please set your Links per sitemap between 200 and 500 in Rank Math > Sitemap Settings > General

Once done, remove all your submitted sitemaps and resubmit your main sitemap, then give Google some time to recrawl your site.
