The most possible reason can be that your sitemap is heavily cached. Can you please try following the steps below to see if that works for you?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. If the above steps doesn’t seem to work, kindly apply the following filter code to your site.
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

Hola, ya he realizado las configuraciones pero sigue sin actualizarse el Sitemap. He desactivado Rankmath y activado Yoast y veo que Yoast sí que me ofrece el Sitemap actualizado. Pero yo quiero seguir utilizando Rankmath, que puedo hacer para actualizar el sitemap con Rankmath?

I’ve followed the step #3 mentioned above and your sitemap is showing updated URLs now. Please refer to the screenshot in the sensitive data section.
However, for now, I’ve added the filter in your active theme’s functions.php file but any changes will be lost after you update your theme.
