For your another error, please follow these steps below:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. Remove all previously submitted sitemaps from your GSC account and resubmit your main sitemap(sitemap_index.xml) and wait for Google to crawl the sitemap again.
That should fix the issue.

I’ve flashed your sitemap cache by following this method. But I can see that you kept disable the Include in Sitemap option for your categories that’s why your category sitemap is not included on your /sitemap_index.xml. If you want to include your category sitemap on your main sitemap then please enable the option from WordPress Dashboard > Rank Math > Sitemap Settings > Categories:

Once done, please try to resubmit your sitemap on Google Search Console.
