The most possible reason can be that your sitemap is heavily cached. Can you please try following the steps below to see if that works for you?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. If the above steps doesn’t seem to work, kindly apply the following filter code to your site.
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

If the issue still persists while using Rank Math’s sitemap, please follow the steps in this link for the common reasons why a URL is not included:

I’ve checked your site, but I’m unable to find the filter you have added to exclude the sitemap from caching:
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');
Please add the filter and check again the sitemaps.
If the issue still persists, please check your web host for any server-level caching and exclude your sitemaps from there as well.
