In his case, please note that some options are only available when you enable the Advanced Mode in Rank Math. If it’s not showing, you must have chosen to use Easy Mode. Please follow the steps in this link to switch to Advanced Mode:

Also, please note that the link option requires that you have the theme support for that according to these guidelines: https://developer.wordpress.org/block-editor/how-to-guides/themes/theme-support/#link-color-control
In this case, you may need to get in touch with your theme support and ask them if they include support for that.

Can you please try switching to the default theme to see if the link color/styling and Dimensions feature is available to you? If so, please get in touch with your theme provider, as they might not be supporting those.
