how to add schema markup to product categories?

Yes, in the PRO version of Rank Math, you will be able to add the ItemList schema on your product category page.

To do that, you will have to disable the option Remove Snippet Data to avoid error on GSC, as product categories are not the actual products. Also, please make sure that you have enabled Add SEO Controls option from WordPress Dashboard > Rank Math > Titles & Meta > Post Type > Product categories.

This should reveal the schema tab in your product category editor, and once done, you will be able to add schema on your product category page.
