Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it could be a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

Please let us know if you find the culprit.
Only the site admin would know and your users won’t be affected by this troubleshooting.

I just tried out like you described. All plugins were deactivated, only the theme was activated. And the option to choose the main category is still not showing. So I guess it’s a theme issue? Can you maybe find out what is the issue so I could contact the theme author?

You need to enable one of your taxonomies as the primary taxonomies via Rank Math > Titles & Meta > Post > Primary taxonomy. I’ve gone ahead and enabled categories on this page for your site. Please check if this is working as expected.
