Google only shows the sitemap URLs that it has crawled through the index sitemap.
All the inner sitemap URLs are already added to the index but Google has not crawled them yet.
I’ll suggest you add this filter to exclude the sitemaps from caching:
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

Once done, resubmit the sitemap and wait for Google to crawl the sitemap.

For crawling I shouldn’t see all the site maps?
Hello,
The URLs will be displayed as Google crawls them. You will see only the sub-sitemaps that are crawled by Google through the main sitemap.

I submitted into google. Google only crawled and displayed until 124 sitemaps. What about my remaining sitemaps?

You are only seeing 124 sitemaps because Google has only crawled those sitemaps.
Crawling of the sitemap depends on the authority and crawl budget of the website.
You need to wait for Google to crawl the other sitemaps.
