Please go to WordPress dashboard > Tools > Site Health > Info tab > Server and check that your PHP resources are above the following values:
PHP Memory Limit: 512M
Max input time: 150
PHP time limit: 120
PHP max input variables: 1000
If the values are low, please increase them. You can contact your host for assistance increasing the PHP values.
Please also verify that your WordPress error logs are enabled. You can follow this guide for how: https://wordpress.org/support/article/debugging-in-wordpress/. Once you have enabled the log, we’ll be able to check any errors that cause the issue.

about the server everything seems ok
I think it’s an error related to a clock enabled when writing a new sitemap.
Now just to edit the wp-config.php, the home page is available again.

Unfortunately, we still can’t see the issue on your homepage whenever we visit your website so it’s difficult for us to troubleshoot further.
Once you encounter your homepage not working on your end, please share a screenshot again as the screenshot you last shared is no longer available. Please extend the validity of the screenshot in https://imgbb.com for at least a week or month.
Also, to ensure that there’s nothing conflicting with your website, please try visiting your homepage using an incognito tab or a fresh browser with no extensions that might be causing the issue.

Every morning the site from 6 to 11 am GMT +1 is always as in the screenshot. Later it returns visible because some plugins are automatically updated. If you visit the page after these times, you will hardly find the problem. If your plugin generates a new sitemap between 3am and 6am it’s very unlikely that you will find the error if you visit the page outside of that period. in any case I will try not to enter the administrative dashboard so as not to execute any process.

We don’t generate the sitemap at any particular time and the generation happens every time on the fly when someone or a bot tries to access the sitemap links.
Looking at your sitemap it seems that the current is getting cached by the WP-Optimize plugin and this could cause some issues with the sitemap when the caching happens.
Our recommendation is that you exclude the sitemap completely from WP-Optimize and also clear any XML files from the following folder: wp-content/uploads/rank-math
