It should be like this:
Source URL: /([0-9]{4})/([0-9]{2})/(.*)
Destination URL: /$3

I tried it on this site: https://christianeschimmel.de/2019/12/15/wie-gebe-ich-meiner-katze-medikamente/ and I get an 404 error instead of a redirection to https://christianeschimmel.de/wie-gebe-ich-meiner-katze-medikamente/
What can I possibly have done wrong?

([0-9]{4})/([0-9]{2})/(.*)
Please also clear your website cache and check again from your end.
