Are you referring to the Rank Math > General Settings > WooCommerce page?
If so, you need to select a taxonomy on the Brand dropdown that will then be used in the product schema for your products. One of the required product schema attributes is the brand and thus you should select the one that best describes your product.

It depends on how have you configured your shop. Wherever you set the product’s brand, it is what you have to set in the list.
For example, let’s say you sell shoes and you divide your shop in categories like Nike, Gucci and inside each category you have every shoes model of that brand. Then you should choose the product category option.
But let’s say you have a computer parts shop, and you have several product categories like: monitors, mouses, keyboards…
And inside each product you set a tag with its brand. For example an Asus monitor will have the tag ‘Asus’, the Dell monitor will have the ‘Dell’ tag… Then you will have to set in the list the tag option.

is it possible to have like zoom meeting with you to go through some of the options? also I want to understand more Rank Math as next month I’m going to take part of the WordPress meeting in Cambridge UK (online zoom) about the SEO tools. They invited someone form Yoast to show the software, so if someone could help me better understand Rank Math, I could use my knowledge about Rank Math as an alternative SEO and let people to pick better option. I know you have website with a lot of information but some of them are not easy to implement in some cases.
