You can exclude the pages from the sitemap from the sitemap settings.
Head over to Rank Math > Sitemap settings > Exclude posts.
You need to enter the post/page ID that you want to remove from the sitemap.

Do note that some options are only available when you enable the Advanced Mode in the Rank Math dashboard:
