We have our sitemap, details below:
The majority of these work, however the post-sitemaps do not. We have 49 of these as we have a number of pages, and only the first one ever created works, which is number 49?
How can we get all of these working?

I’ve checked your post sitemap,s and indeed they are showing blank pages.
For initial troubleshooting, please make sure that your sitemap is not getting cached. Please follow these steps:
1. Ensure you’re using the latest version of your plugins/theme including the Rank Math plugin.
2. Flush the Sitemap cache by following this video screencast:
https://i.rankmath.com/xXXhDt3. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server:

So we did that, and the sitemap is already excluded from Wp Rocket
Still the same issue unfortunately, the only one working I have added to the data area – and that one only has around 165 URLs in there.
The other part, when we run these it pretty much takes our site offline by adding a huge overhead of resources. How can we get this working properly?

I checked the page source of the sitemap, and it is empty.
Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.
To determine that, please follow this troubleshooting guide:

Only the site admin would know and your users won’t be affected by this troubleshooting.

We checked this, and now it’s throwing a Critical Error on the Post Sitemaps, all but the last one generated (which only has a small % of pages).
This is actually working for all other sitemaps, so am struggling to see how it is a plugin issue (which surely would affect the entire sitemap plugin, and not just posts?) – which seems like it could be a bug of some sort in this case. Can you please advise.
To update, this is still not working without any plugins activated, other than Rank Math (using Health Check plugin) – so there is definitely something happening outside of plugins here

I just got word from our dev team.
It looks like your site’s memory is getting exhausted since you have set the “Links Per Sitemap” to 900+. You may need to increase the values of the following:
PHP Memory Limit Max Input Time Max Input Variables
For now, we have changed the Links per Sitemap to 200 and it is now working.
