If the Rank Math option is not showing upon clicking the dropdown button, assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.

Only the site admin would know and your users won’t be affected by this troubleshooting.

I installed Health Check plugin…enabled it and let it do it’s thing, and lost my entire website. I am NOT happy.

Since your issue appears after installing the Health Check plugin, please log in to your website via FTP/cPanel and head over to /wp-content/plugins and rename health-check folder to anything else.
