As an initial troubleshooting step please follow the below steps and see if that helps:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
3. Clear your website and browser’s cache and check the sitemaps.
If the issue persists, as Jetpack also generates XML sitemaps, please ensure that the sitemaps from Jetpack are disabled and see if that helps.
In case the issue still persists, as the conflict is coming from Jetpack, we suggest you reach out to the Jetpack support team as they might already have a solution for the issue and they would be in a better position to assist you.
