Should I use product schema if I review Amazon products? And should I mention the price and other details like SKU? Because if I don’t Google shows no rating. Thanks.

Thank you for contacting Rank Math and bringing your concern to our attention.
Rank Math provides the Product Schema which is only used for an actual product page.
This is also included in Google’s guidelines for using the product schema:
https://developers.google.com/search/docs/data-types/productI would suggest using the blogpost or article schema if your post is a review of the product.
