1. If you have historic data in your Google Search Console account, it should be fetched for 90 days.
2. As long as the analytics code is present on the website, Google would be able to track the website and we’ll not have any issues.
3. Please check if cron jobs are working on your website or not, you can follow this guide to check that: https://rankmath.com/kb/analytics-issues/#num-2-check-the-cron-job
In order to fetch the data correctly and consistently, you need to have the cron jobs working and enabled in your installation.
If the cron jobs are working, please head over to your WordPress dashboard > Tools > Scheduled Actions > Pending, and check if there is a pending Scheduled Action:
https://yourdomain.com/wp-admin/tools.php?page=action-scheduler&status=pending
If yes, run the rank_math/analytics/data_fetch
scheduled action and wait for the data fetch to complete.
You can check the progress at Rank Math > Analytics.

That is all coming through now. Something I noticed, rank_math/analytics/data_fetch is set to run once a week
Can this be modified within RankMath or should I contact my server team

This Scheduled Action cannot be modified because in the Free plugin, the data is updated every 7 days.
