Rank Math uses an external script for that snapshot and they usually update screenshots after a couple of weeks thus, it could be that the snapshot is still being cached. Please give it some time after you cleared your website cache then test again.

The mobile snapshot in the SEO Analysis is cached from the service that we use to show those images, so there’s nothing we can do from our side. That screenshot is only updated when the cache on the service runs out, and it usually happens after a week or so.
However, please note that this will not affect your actual live site’s mobile screenshot as search engines test your current site’s state.
Alternatively, you can use a different tool like the Mobile-Friendly Test from Google to see your website’s mobile snapshot.
