While setting up a redirection you don’t need to set noindex to the content. Since it’s 301 redirection it will permanently move to the new URL so it doesn’t have any effect.

Great news to hear, and what about the canonical links ? Should I set up it on the new url or stay on the old one (just above the 301 move and the redirection) ?

If you’re referring to the canonical of the old URL, you can leave it as it is already redirected.
For the new URL, you should set it to reference itself. There’s no need to set a canonical tag on the new URL, as its purpose is to let Google know that it is a duplicate page, and should not be indexed.
