For the category, you can make use of this variable: %category%. If you are using a custom taxonomy, you can make use of this variable instead: %customterm(taxonomy-name)% and that may apply to your locations. If the location is a taxonomy, you can make use of this configuration: %customterm(location)%

I checked one of your listing posts and it seems the meta has been updated as you can see in my video screencast in the Sensitive Data section.
Also, the variable %customterm(location)% is generating the same term as Yoast’s title if you check your post’s view source. Please check the screenshot in the Sensitive data section.
