Please follow the steps below to address this issue:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
3. After doing so, remove all your sitemaps from your GSC and resubmit only the primary sitemap (sitemap_index.xml).

You don’t have to install a caching plugin. The guide is to help you exclude the sitemap from caching plugin if you are using any.
And it will take some time for Google to recrawl your sitemap after resubmitting. Please wait for the last crawl date to update in the Sitemap section of your GSC account.
