The strip category base option only removes the category part of the URL, not the actual category name.
This redirect is added by WordPress. It depends on your permalinks structure configured in the WordPress settings.
If you wish to change that, you can set a custom base in the WordPress permalinks settings.
Please note that changing the permalinks on a live, indexed, and established site may result in a serious loss of traffic.
