Hello,
The alt text is added inside the image:caption tag by default in the sitemap. However, Google will read the data from the actual page/post and will be able to detect the correct alt, title, and other attributes of the images from the HTML of your page.
Having said that, I have forwarded this to the devs and they will look into this.
