Please ensure that you’ve enabled the Category Sitemaps from Rank Math > Sitemap Settings > Taxonomies: Product Categories. Here’s a screenshot for a quick reference: https://i.rankmath.com/JEwtkB
Once done, please follow the below steps and see if that helps:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
3. Clear your website and browser’s cache and check the sitemaps again.

Thanks for your reply, I’ve followed all of your steps including the flush and disabling of cache, but they don’t seem to help.
I’ve included the category and the product category sitemap but they both return a 404 page.
They both don’t show up in the index sitemap either.
Any idea how we can fix this?

I have set them to index and it is now added to the sitemap.
