I also discovered that you can add multiple Sitemaps to GSC. Had not done that since RankMath has never (I think) said to add multiple sitemaps to GSC. Maybe it didn’t need to be done anyways, but I did add sitemaps for products and other things (on top of the main index one). That could be part of the problem.

You don’t have to add all the sitemap pages to your GSC. Simply submitting the primary sitemap page (https://domain.com/sitemap_index.xml) should suffice. Google will automatically read the remaining sitemaps.
As for the indexing issue. Please click on the details of the error so to reveal the affected URL.

Well, looks like after adding the other sitemaps, there were more links added as “Discovered – currently not indexed”
What details do you mean? There isn’t much else to look at. Just the links.

The Discovered – currently not indexed status means that Google knows about these URLs, but they haven’t crawled (and therefore indexed) them yet.
Here is what Google says about this status:
Discovered – currently not indexed: The page was found by Google, but not crawled yet. Typically, Google tried to crawl the URL but the site was overloaded; therefore Google had to reschedule the crawl. This is why the last crawl date is empty on the report.
You need to wait for Google to crawl and index those URLs.
