Rank Math adds the CollectionPage Schema to your shop and product category pages. So you don’t have to apply any other Schema type manually to those pages. You should keep the default setup for your homepage and collection pages.

You won’t be able to see the schema set on those pages. Please try testing your pages here: https://validator.schema.org/
This should help you confirm that the said schema is added to the pages.
