Assuming you are using the latest version of all the plugins and the themes (please update if not yet), it would seem like a conflict with one of the plugins or the theme you are using.

I have cleared the Rank Math Transients by going to Rank Math > Status & Tools > Database Tools > Remove transients and the SEO score is now maintaining consistency.

I logged into your website’s admin area but was unable to replicate the issue. Please have a look at the screencast in the sensitive data section of this ticket.
It seems like the score was cached in the product and as I opened the product, the actual score was calculated. However, upon saving, the score remained the same (correct one).
Please clear your website, browser, and server’s cache (if any) and see if that fixes the issue.
