Can you please follow these steps?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
3. If the issue still persists, please add this filter in your active theme’s functions.php file:
add_filter( 'rank_math/sitemap/enable_caching', '__return_false');

BTW, I would like to update you that rightnow we are not using any cache plguin on our site.
Should we keep this setting continue?

If you are not using any caching plugin and your sitemap is still getting cached, you should add the filter shared by my colleague in your theme’s functions.php file.
