Max input time: 150
PHP time limit: 120
PHP max input variables: 1000

here are my parameters:
Variable PHP maximum input 12000
PHP 300 time limit
PHP 512M memory limit
Maximum input time 300
Error log of today:

Obviously if I disable the Rankmath plugin everything will work normally again.
How could I go about solving the problem?

I was able to replicate the issue on your site. The issue is being caused by a long keyword in your focus keyword field:
Discoteca La Villa Aperitivo Djset venerdì 4 marzo 2022
We recommend that you try to use smaller focus keywords to prevent issues like this in the future.
