You can change your breadcrumb settings at WordPress Dashboard > Rank Math > General Settings > Breadcrumbs.
Make sure to enable categories on that page.
Also, make sure Category is selected as the primary taxonomy at WordPress Dashboard > Rank Math > Titles & Meta > Posts/Pages
You can use any other plugin for breadcrumbs too, just make sure to disable Rank Math breadcrumbs.

Great thanks heaps, with a bit of CSS I was able to style it. Is there a way to enable the complete trail of menu items as I’m only getting back to home even when on a sub-menu page?

I am afraid that it is not currently possible to add these kind of page items on the breadcrumb trail from the UI.
To be able to add all the links, you will need to create some custom code using the following filter:
