Do you have support for the editor in that CPT? Also, please check if the description is updated correctly with that data in the source code of the page.
The snippet preview will only work if you have editor support but the outputted values will be available on the source code and being able to be parsed by Google.

Thank you for the advice. It didnt occur to me to check the source code. Upon checking I can see that the data is included in the header so it seems to actually be working fine on the front end.
