The index robots meta affects your site’s ability to be properly indexed by the search engines so that it has a chance to be found on search results pages.
The Analytics data is simply reporting on your site’s traffic and where it comes from. When you see a drop in data after adding a NoIndex / NoFollow in the Thank you page, it’s not Analytics that’s been affected, it’s your site’s traffic.
