Could you please follow the below steps and see if that fixes the issue:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

3. Clear your website’s cache and remove all the sitemaps from your Google Search Console account, and then submit the sitemap like this: https://yourdomain.com/?sitemap=1(please ensure to replace “your-domain.com” with your actual domain).

All the URLs on your website have a canonical that is not the same as the page URL since it’s being added the AMP query parameter to all the post URLs.
Our plugin only adds posts that have a self-referring canonical to the URL to prevent issues with Google indexation.
This seems to be added by your AMP plugin and you should get in touch with their support team to get more information on how you can change this.

Removing the canonical URL will also remove the post from the sitemap. I would suggest checking this one out with your AMP plugin as Rank Math only renders the URL that was provided by your AMP plugin as recommended by my colleague.
