You can’t set two different Global Templates for the categories & subcategories as they both are the same taxonomy. If you want a different title and description for subcategories then you will have to do that manually by editing each subcategory.

If you want to set a template for all your product categories including the subcategories then please navigate to WP Dashboard > Rank Math > Titles & Meta > Product Categories and set a global title and description template.

You can simply add a simple but brief description for your category. Meta descriptions can technically be any length, but Google generally truncates snippets to 155 or 160 characters. It’s best to keep meta descriptions long enough that they’re sufficiently descriptive, so we recommend descriptions between 50 and 160 characters.
Another thing is that your meta description should contain a keyword which you are trying to rank.
By default, Rank Math uses %excerpt%
which grabs a few words from the beginning of your content. If %excerpt%
is already enough to optimize the meta description of your categories, you can leave it as is.

I have 2 more but major questions
1. I can only add one focus keyword but no additional keyword in categories? why is that? Its mentioned that for a free version up to 5 keywords are allowed. Please clarify at the earliest
2. Say i buy a pro version can i upgrade to a business version in a month or so and if so will my existing credits and benefits will be adjusted.

1. The maximum of 5 keywords is only applicable for your regular posts/pages and CPT.
Rank math will only allow one Focus keyword in the Taxonomy pages(Category/Tag etc.), as there are no tests for the secondary keywords in such a small piece of content.
