I am afraid that this variables are not available in the plugin but you can easily define your very own variables to use on your PHP function my hooking into the following filter:
/**
* Filter to add Brand Name for Products.
*
* @param array $entity Snippet Data
* @return array
*/
add_filter( 'rank_math/snippet/rich_snippet_product_entity', function( $entity ) {
return $entity;
});
