What actually happens is when I write my title and description in Rankmath SEO editor on a page, I save. Then by refreshing, these elements are no longer there.

I logged into your website’s admin area but I was unable to replicate the issue. The SEO Title/Description is saved properly. I also tested this with the page that you’ve shared in the sensitive data section and it seems to be working fine.
Please have a look at the screencast in the sensitive data section of this ticket for a quick reference.
With that being said, upon investigating the source of the page on the front end, I noticed that the changes in the SEO title are not updated there as the SEO Title is not being added by Rank Math, rather, your theme is adding the title tag.
You can find this under the header.php file of your theme. If you wish to use the SEO Title of Rank Math, then please disable/comment out the title tag in the theme to fix the issue.

Yes, you can remove that line to remove the title tag generated by the theme.
It is recommended to take a backup of the website before making any changes to the theme files.

is it to avoid to have 2 title <H1> ? Or just to tell to Rank math to decide (by me when I fill the snippet) that rankMath title has to overide title page ?

Your theme is restricting Rank Math from generating the title tags so whatever changes you make in the SEO Title field, aren’t updated on the front end of the website.
This is different from the H1 tag.
However, I checked the source of the page and you’ve commented out the title tag but the title tag of Rank Math is still not generated.
Upon investigating, I found that the theme is still restricting Rank Math from generating the tags. You can have a look at the screencast in the sensitive data section of this ticket.
Please get in touch with your theme developers regarding this as they would be in a better position to assist you.

I checked and it seems like your theme devs have uncommented the title tag of the theme as they’re generating the title tag again.
Rank Math is unable to generate the title tag due to the theme. Please show the screencast I shared previously to your theme developers and ask them to disable the title tag completely and allow Rank Math to generate the tags.

Also, I sent the sitemap in Google Search Console, but page not looks indexed by sitemap, do you know why ?
