No Indexed products are by default excluded from the sitemaps.
If it’s still showing, then please follow the below steps and see if that fixes the issue:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

We might need to take a closer look at the settings. Please edit the first post on this ticket and include your WordPress login in the designated Sensitive Data section.

I think the issue was this:
Cache + that I have a snippet to set no index some products under one specific category; I see the no-index meta tag, but then those products were in the sitemap.
I put no index on each product, manually, and now those products were excluded from the sitemap.
It is working now.
