Rank Math will automatically create a new sitemap.
When you disable Yoast, the old sitemap will automatically stop working.
If the submitted sitemap on Google Search Console is not sitemap_index.xml, you will have to remove the old one and add the correct one here:
https://support.google.com/webmasters/answer/183668?hl=en
