Can you please follow these steps?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:

Kindly ignore. I could fix this by regenerating the sitemap by changing the number of links per XML. Thank you.
Also, I always had “/(.*)sitemap(.*).xml” in my list of cache exclusion links. Somehow that doesn’t seem to work.

It seems you have marked the ticket as resolved.
If you have that rules in your sitemap exclusion list already, please make sure you have followed the 2nd point which my colleague shared to exclude sitemap for different plugins cause there are different rules for different plugins.
If you are using Cloudflare cache then you also have to exclude the sitemaps from caching from Cloudflare by following this guide:

Finally, please remove the sitemap from GSC and submit the main sitemap again by the following guide. You need to be patient and just wait for Google to crawl your site.
