It seems that you’re using the product schema for your product category pages.
Google recommends disabling the schema to your product category page and the product Schema is only for the actual product and not for anything else. You can check this link for more information:

To do that, please head over to Rank Math > Titles & Meta > Product: Categories and enable the “Remove Snippet Data”:

Please also note that some options are only available when you enable the Advanced Mode in Rank Math. If it’s not showing, you must have chosen to use the Easy Mode. Please follow the steps in this link to switch to Advanced Mode:

Thanks for the answer. I’m already using the Rank Math advanced mode.
The reason I’m concerned about category pages is that they are all well ranked for me on SERPs, so I’m wondering if there’s the chance to show the aggregate rating review snippet along the search results.
If i disabled schema for such pages, as you suggest, how would my results appear on the serp? Would Google (and Rank Math) still be able to recognize the aggregate rating and show the proper star rating snippet, based on the actual reviews I’m getting in Woocommerce?
I know for a fact that many competitors of mine are using single product schema for their category pages, in order to show the star rating rich snippet based on the aggregate rating average value an total review count extracted from actual reviews on their category pages.

The guidelines from Google are very precise and mention that you shouldn’t use the Product Schema on those aggregator pages unless those pages have a single product.
If you don’t want to follow those guidelines and show the rating stars on those pages you would need to manually add it to those pages with the help of the Schema Generator and possibly have to edit it further with this filter: https://rankmath.com/kb/filters-hooks-api-developer/#extend-json-ld-data
Please note that not following the guidelines might get you a manual penalty down the line and lose all the work done.
