As you’re seeing the results in Googe Images, those images are indexed directly when Google crawls the website.
If you wish to change those images, then you can change the image in the website itself and Google would also update the images.
Please note that as the images are already indexed, it can take time for them to get removed from Google Images.

Google are taking the thumbnails and showing them, not the image which is good quality and correct dimensions. I want to change this. How?
Is it possible to configure this, so that my prefered image is shown in Google Search restulats and not the generated thumbnail which is shown in archive and on single product page before enlaring the image which is good quality and correct dimensions?
Im using generated thumbnails to display everything alligned in my archive.

An image cannot be removed from Google search results without without removing the image from the post or setting it to noindex in the robots.txt file.
Google also uses the page structure to determine the correct appropriate image to show in search results. The main/first product image is usually preferred.
You may manually set the schema product photo and social snippet image to your preferred image but the results are not definite as Google may still choose the default product photo.

When I checked the product page https://www.gallerifusion.dk/preben-hornung-maleri-1/, the secondary image https://www.gallerifusion.dk/wp-content/uploads/2021/10/preben-hornung-galleri-fusion-1602-1-600%C3%97839.jpg was redirecting to the home page. That works as a solution.
Unfortunately, if you have set your preferred primary image and set the schema markup to also indicate the primary image and Google decides to use another image that is on your page, there is nothing much that can be done besides deleting or noindexing the unwanted image.
