Could you please head over to WordPress Dashboard > Settings > Permalinks and hit the save button once.
Then Go to WordPress Dashboard > Rank Math > Sitemap Settings
Hit the save button once.
That should fix the issue.
You can then resubmit your main sitemap in your GSC.

Could you please confirm if you have enabled the sitemaps module from the Rank Math Dashboard? If not, then kindly enable it.
If the sitemaps module is already enabled and you are still experiencing this issue then please follow these steps:
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. For plugins or Cloudflare, please follow this article:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
Once done, remove all the sitemaps from GSC and add sitemap_index.xml and wait for Google to crawl the sitemap.
