The sitemaps on your website are loading properly with all the new posts being listed.
Upon investigating your website, I noticed that you’ve not enabled the category sitemaps, could you confirm if you do not wish to get the categories indexed? If yes, please set the Category Archives Robots Meta to No Index from your WordPress admin area > Rank Math > Titles & Meta > Categories.

I also checked the robots.txt file and you’ve Disallowed page 2 of your homepage from being crawled. As that page contains posts and it gets updated with each new post being published, it is recommended to remove that rule. https://i.rankmath.com/ZcJeya
Once done, please clear your website’s cache and wait for Google to crawl the website again and see if the posts start getting indexed again.

The URLs are already discovered by Google. Although Google decided not to index it for some reason.
Please click on any URLs and check for a coverage issue so we can identify why Google refuses to index these posts.

Discovered, not indexed, simply means that Google is aware of the page’s existence but the pages are yet to be crawled. Typically, Google wanted to crawl the URLs but this was expected to overload the site; therefore Google rescheduled the crawl. This is why the last crawl date is empty on the report.
I checked a few URLs mentioned in your last screenshot and the URLs are set to index and listed in the sitemap. The robots.txt also seems fine now.
I also checked the last cached version of your website and the website was crawled today itself (Oct 14th, 2021). Here’s a screenshot: https://i.rankmath.com/SZD2VF
I suggest you get in touch with your web host to ensure that the server is not getting exhausted when the website is being crawled.
Once done, please clear your website and any server-side cache and give Google some time to crawl the website again and see if the pages are indexed.

I have done everything possible from my end including clearing server side Cache through, hostinger. Still, issue is persisting.
I agree that Google is crawling my site, but it is not indexing my Posts since 27.09.2021. Instead it is indexing Categories. Please help. Sensitive data already enclosed.

Since all the settings are fine on your site and the issue with your sitemap.xml is also fixed, please remove all previously submitted sitemaps from your GSC account and resubmit your main sitemap(sitemap_index.xml).
If the issue still persists even after Google crawls your sitemap again then you can check your posts using the URL inspection tool if there is an issue: https://support.google.com/webmasters/answer/9012289?hl=en

As suggested, I have removed old sitemap https://careerbanaye.com/sitemap.xml from Google Search Console (GSC) and have submitted new sitemap https://careerbanaye.com/sitemap_Index.xml into it successfully. The same has been crawled yesterday evening. Please let me know, how may days GSC will take to crawl my posts inside new sitemap for indexing.
Also, I have checked in site:https://careerbanaye.com that GSC is indexing Categories instead of post. I published one post 2 days back under ‘Technical’ Category and the same is appearing being indexed inside ‘Technical’ Category. Screenshot link is enclosed, please suggest and guide.

I checked the category URL, it was last crawled on 15 Oct 2021, and it was set as index at that time:
I checked the page source of the URL, it is set to noindex now. You need to wait for Google to recrawl the website to see the noindex tag and remove the URL from the search results.
While there is no specific time when Google crawls your site, it depends on various factors such as site age, authority, crawl budget of your website
