Google crawls small-sized sitemaps faster. With this in mind, Rank Math uses the link per sitemap limit to break down sitemaps into smaller parts. For example, if you have 1200 posts on your site and have set the links per sitemap limit to 200, you will find post-sitemaps named from /post-sitemap1 to /post-sitemap6 inside your /sitemap_index.xml.
Links per sitemap limit is set to 200 by default. However, you can change the limit of links per sitemap by going to Rank Math > Sitemap Settings > General > Links Per Sitemap.
I see the most recent post link in your sitemap, which is posted at 2021-09-17 08:25 -04:00. Could you please share with us post links that are not included in the sitemap?

Adding to my colleague’s reply, could you please follow these steps and see if the newer posts are added to the sitemaps?
1. Flush the Sitemap cache by following this video screencast:

2. Exclude the Sitemap files of the Rank Math plugin in your caching plugin. The cache could be via a plugin or from the server. please follow this article for more:
https://rankmath.com/kb/exclude-sitemaps-from-caching/
3. Clear your website and browser’s cache and check the sitemaps.
