It is a pretty common thing with Google these days. It happens with 70% of the results and we even have a KB dedicated to this problem and a few solutions we recommend:

Please check the KB and you will understand the reasons Google does this.
Google has made some changes to their algorithm which automatically changes the titles, discarding the one you have set in your SEO title meta tag. This happens regardless of the SEO plugin you are using. We have covered this Google update here:

Thanks. Very interesting articles, but as we’re currently testing the plugin in our QA environment, the pages aren’t being indexed on Google, and the issue specifically relates to the separator. We changed the default ‘-‘ to a ‘|’, but on some pages (title of the tab/title tag) still show ‘-‘.
The pipe separator format though is what the snipper shows it should be on both the page with WordPress console and the Rank Math Global Meta setting.
Here’s an example.

Not correct: https://qa.worldjewishtravel.org/about/
After looking more closely I can see that on the correct pages, your tags are enclosed in comments (source).

So it looks like your code is implementing correctly on some pages.

I checked the source of the pages and in the /about/ page, there are duplicate title tags.

Also, only the title and robots meta tags are present on the about page, whereas on the FAQ page, all the SEO tags are present.
We might need to take a closer look at the settings. Please edit the first post on this ticket and include your WordPress & FTP logins in the designated Sensitive Data section.

I’ve checked the /about/ page, and it seems that the page is being generated as a template page.
Also, there’s a critical error showing upon editing that on your WordPress dashboard > Pages. Could you please check and confirm?

Yes, it’s a templated page. So is /faq, /blog and /eguide-library where the plugin seems to be working.
A developer will need to work on the critical error, so thank you for highlighting it. The following examples open in the dashboard pages section and have the same issue as /about: the Rank Math preview shows the correct title, but it’s not on the page when it loads and there seems to be Rank Math code missing when looking in the source.

The pages you mentioned that are templated (/faq, /blog, /eguide-library) as well appear on your website as pages and that’s why our plugin is able to correctly attract itself to them.
The others seem to be dynamically generated and our plugin is not attaching to them.
Also, while the others show the name of the template in the admin bar, the ones failing don’t have any information relative to that which further confirms what we mentioned previously.
If Rank Math can’t attach to those pages it also can’t change the title or any other data according to your settings.
Don’t hesitate to get in touch if you have any other questions.
I spoke to our developer and he advised that all the pages are templated and from a technical perspective, they’re the same. Either way, there’s clearly something in the code that’s preventing Rank Math attaching to those pages.
