If yes, then there’s nothing else required at this time as the pages would be automatically removed from the search results when Google would see the changes.
Please note that there’s no fixed time for Google to remove the pages from the search results. This is an automated process and can take a few days or even weeks for the pages to get removed.

So I have set them all to no-index plus I have edited my robots to handle other pages that should ideally be removed.
So far so good.
So going forward, would it be true to say that pages NOT in a sitemap can nonetheless get indexed so long as they are marker index?

Yes, you are correct. Setting them to noindex and excluding them from your sitemaps are enough to let Google know that they shouldn’t be indexed at all.
